A good sandwich is all about contrast. Here, tangy Dijon mustard balances the rich sweetness of caramelized onion jam while mozzarella ties everything together.
INGREDIENTS
2 tbsp butter
2 slices brioche bread
2 tbsp Divina Dijon Mustard
3 oz grilled chicken, sliced
2 slices mozzarella cheese
2 tbsp Caramelized Onion Jam
Salt and black pepper, to taste
INSTRUCTIONS
- Heat a skillet over medium heat.
- Butter the outsides of the brioche slices. Spread 1 tablespoon Dijon mustard on the inside of each slice.
- Place one slice of mozzarella on one piece of brioche.
- Top with the grilled chicken, then spread the Caramelized Onion Jam over the chicken. Add the second slice of mozzarella.
- Close the sandwich and place it in the skillet.
- Cook until golden brown on both sides and the cheese is melted, flipping as needed.
- Remove from the skillet, cut in half and serve.
