Grilled Chicken Sandwich with Caramelized Onion Jam

A good sandwich is all about contrast. Here, tangy Dijon mustard balances the rich sweetness of caramelized onion jam while mozzarella ties everything together.

INGREDIENTS

2 tbsp butter
2 slices brioche bread
2 tbsp Divina Dijon Mustard
3 oz grilled chicken, sliced
2 slices mozzarella cheese
2 tbsp Caramelized Onion Jam
Salt and black pepper, to taste

INSTRUCTIONS

  1. Heat a skillet over medium heat.
  2. Butter the outsides of the brioche slices. Spread 1 tablespoon Dijon mustard on the inside of each slice.
  3. Place one slice of mozzarella on one piece of brioche.
  4. Top with the grilled chicken, then spread the Caramelized Onion Jam over the chicken. Add the second slice of mozzarella.
  5. Close the sandwich and place it in the skillet.
  6. Cook until golden brown on both sides and the cheese is melted, flipping as needed.
  7. Remove from the skillet, cut in half and serve.
