Inspired by simple Tuscan flavors, this hearty salad pairs Divina Gigandes Beans in Vinaigrette with tender tuna, fresh herbs and bright lemon for an easy lunch or light dinner.
INGREDIENTS
4 c Divina Gigandes Beans in Vinaigrette
12 oz tuna in oil
1/2 lemon
Sea salt, to taste
3–4 scallions, sliced
1 1/2 tbsp fresh flat-leaf parsley, coarsely chopped
Pinch red pepper flakes
Olive oil, for drizzling
INSTRUCTIONS
- Measure out 4 cups of Gigandes Beans in Vinaigrette, drain and transfer to a large bowl.
- Drain the tuna and add it to the beans.
- Squeeze the lemon over the tuna and season with sea salt.
- Scatter the scallions and parsley over the mixture and finish with a pinch of red pepper flakes.
- Drizzle generously with extra virgin olive oil and gently toss to combine before serving.
