Olive Bruschetta Stuffed Avocados

Perfect as a snack, light lunch or healthy dinner, this dish is creamy, lively and chock-full of fresh-from-the-garden flavor. Our Organic Olive Bruschetta is packed with green and Kalamata olives, roasted peppers, capers, garlic, herbs and spices.

INGREDIENTS

1/2 c Divina Organic Olive Bruschetta
4 avocados
1 lime, zested and juiced
1/2 c pico de gallo
1/2 c black beans, drained and rinsed
1/4 c scallions, diced
2 tbsp fresh cilantro, chopped
Salt and pepper, to taste

INSTRUCTIONS

  1. Slice the avocados in half. Remove and discard the pits, then rub the cut sides with lime to help prevent discoloration.
  2. In a bowl, combine the Organic Olive Bruschetta, lime zest and juice, pico de gallo, black beans, scallions and cilantro. Season with salt and pepper to taste.
  3. Arrange the avocado halves on a platter or individual serving plates.
  4. Fill the centers of the avocados with the olive salsa mixture.
  5. Serve with tortilla chips.
