1 lime, zested and juiced
1/2 c pico de gallo
1/2 c black beans, drained and rinsed
1/4 c scallions, diced
2 tbsp fresh cilantro, chopped
salt and pepper, to taste
- Slice avocados in half. Remove and discard pits and rub cut side with lime to prevent discoloration.
- In a bowl, combine remaining ingredients and season to taste with salt and pepper
- Arrange avocados on a platter or individual serving plate
- Fill center of avocados with olive salsa and serve with tortilla chips
