Perfect as a snack, light lunch or healthy dinner, this dish is creamy, lively and chock-full of fresh-from-the-garden flavor. Our Organic Olive Bruschetta is packed with green and Kalamata olives, roasted peppers, capers, garlic, herbs and spices.
INGREDIENTS
1/2 c Divina Organic Olive Bruschetta
4 avocados
1 lime, zested and juiced
1/2 c pico de gallo
1/2 c black beans, drained and rinsed
1/4 c scallions, diced
2 tbsp fresh cilantro, chopped
Salt and pepper, to taste
INSTRUCTIONS
- Slice the avocados in half. Remove and discard the pits, then rub the cut sides with lime to help prevent discoloration.
- In a bowl, combine the Organic Olive Bruschetta, lime zest and juice, pico de gallo, black beans, scallions and cilantro. Season with salt and pepper to taste.
- Arrange the avocado halves on a platter or individual serving plates.
- Fill the centers of the avocados with the olive salsa mixture.
- Serve with tortilla chips.
