Basil, Goat Cheese & Kalamata Stuffed Peppers

A twist on pepper poppers, these broiled bell peppers are the perfect base for the creamy, fruity and herbaceous addition of basil, goat cheese and Kalamata olives. A perfect dish to entertain a small group of friends before the main course.

INGREDIENTS

1 c Divina Organic Sliced Kalamata Olives
6 oz goat cheese crumbles
1/4 c fresh basil, chopped
2 tbsp roasted garlic cloves, chopped
1 lb mini sweet peppers, halved and seeded

INSTRUCTIONS

  1. Preheat the broiler. In a bowl, combine the Kalamata Olives, goat cheese, basil and garlic.
  2. Season the mixture with salt and pepper, then spoon it into the pepper halves.
  3. Arrange the stuffed peppers on a baking sheet and broil for a few minutes, until the cheese is hot and bubbly.
  4. Serve warm.
