Muffuletta Chef's Salad

INGREDIENTS

1 head romaine or butter lettuce, chopped
2 oz ham
2 oz salami
2 oz mortadella
2 oz provolone
1/4 cup Divina Muffuletta Olive Salad, brine drained and reserved
1/4 cup Divina Pepperoncini, sliced
1/2 loaf Italian bread, roughly cubed into large crouton pieces
Extra Virgin Olive Oil
salt and pepper, to taste

 

    INSTRUCTIONS

    1. Preheat the oven to 350 degrees.
    2. Toss bread pieces with olive oil, salt and pepper. Bake for about ten minutes, or until crunchy. Set aside.
    3. While the croutons are baking, dice meat and cheese into bite-size pieces.
    4. Toss all ingredients except brine.
    5. Add brine and olive oil to salad in place of dressing, to taste. Divide into bowls and serve.
