Muffuletta Chef's Salad

This chef salad takes inspiration from the classic muffuletta sandwich, combining Italian meats, provolone, pepperoncini, and Divina Muffuletta Olive Salad in one hearty bowl.

INGREDIENTS

1 head romaine or butter lettuce, chopped
2 oz ham
2 oz salami
2 oz mortadella
2 oz provolone
1/4 c Divina Muffuletta Olive Salad, brine drained and reserved
1/4 c Divina Pepperoncini, sliced
1/2 loaf Italian bread, roughly cubed into large crouton pieces
Olive oil
Salt and pepper, to taste

INSTRUCTIONS

  1. Preheat the oven to 350°F.
  2. Toss the bread cubes with olive oil, salt, and pepper. Bake for about 10 minutes, or until crisp. Set aside.
  3. While the croutons bake, dice the ham, salami, mortadella, and provolone into bite-size pieces.
  4. Combine the lettuce, meats, cheese, Muffuletta Olive Salad, pepperoncini, and croutons in a large bowl.
  5. Dress the salad with the reserved Muffuletta Olive Salad brine and additional olive oil, to taste. Toss, divide into bowls, and serve.
