These Mediterranean spring rolls are a fresh and easy appetizer filled with crisp vegetables, creamy feta and briny Divina Chili Lime Olives. This simple fusion recipe is perfect for warm weather, picnics or light lunches.
INGREDIENTS
12 round rice paper wrappers
1 c cooked and cooled vermicelli noodles
1 cucumber, julienned
1 c red cabbage, thinly sliced
½ c Divina Chili Lime Frescatrano Olives, pitted and sliced
½ c feta cheese
¼ c fresh parsley, chopped
INSTRUCTIONS
- Fill a shallow bowl or pan with warm water. Dip one rice paper wrapper into the water for 10 to 15 seconds until soft and pliable.
- Lay the wrapper flat on a clean surface. Layer a small amount of noodles, cucumber, cabbage, olives, feta, and parsley in the center.
- Fold the sides inward, then roll up tightly from the bottom like a burrito.
- Repeat with remaining wrappers and filling ingredients.
- Serve immediately with your favorite dipping sauce.
