Taco night just got a Mediterranean twist! These fresh and flavorful tacos are made with warm pita, seasoned ground chicken and briny Divina Olives. Perfect for anyone looking for a creative taco recipe.
INGREDIENTS
Seasoning blend:
Dried oregano
Dried basil
Thyme
Rosemary
Ground cumin
Smoked paprika
Garlic powder
Onion powder
Crushed red pepper flakes, to taste
Salt and black pepper
For the tacos:
1 c cherry tomatoes, halved
1 cucumber, diced
½ red onion, sliced
½ c Divina Organic Sliced Kalamata Olives
½ c Divina Marinated Feta Olives, crumbled
2 tbsp parsley, chopped
2 tbsp lemon juice
1 garlic clove, minced
1 tbsp olive oil
Salt and black pepper, to taste
12 oz ground chicken or plant based protein
4 to 6 pita bread rounds
Tzatziki, for serving
INSTRUCTIONS
- In a large bowl, toss together tomatoes, cucumber, onion, Sliced Kalamata Olives, Marinated Feta & Olives, parsley, lemon juice, garlic, olive oil, salt and pepper
- Brown the ground chicken or plant based protein in a skillet with the seasoning blend until fully cooked.
- Toast pita rounds in a pan or on a grill for 1 to 2 minutes per side until warm and lightly crisp.
- Fill each pita with the seasoned protein and top with the Mediterranean salad.
- Drizzle with tzatziki and serve immediately.
