These bite-sized appetizers put a playful spin on deviled eggs. Sweet cherry peppers, often sold as Peppadew® or Pepperbella peppers, are stuffed with a creamy egg salad filling, then finished with sunflower seeds and fresh chives for added texture and flavor.
INGREDIENTS
2 c Red Pepperbella™ Sweet & Spicy Cherry Peppers
2 c prepared egg salad
1/4 c roasted and salted sunflower seeds
2 tbsp chives, finely sliced
INSTRUCTIONS
- Slice 1/8 inch off the open end of each pepper to enlarge the opening.
- Finely chop the pepper trimmings and add them to a bowl with the egg salad, sunflower seeds and chives.
- Mix well and season to taste with salt and pepper.
- Fill the peppers with the egg salad mixture and serve.
