INGREDIENTS
1 c Divina Roasted Red Tomatoes, drained (reserve 3 tbsp marinade)
1 lb ground lamb
1 tsp kosher salt
1 tsp freshly ground black pepper
1/2 tsp paprika
1/4 tsp cumin
1/4 tsp coriander
1 garlic clove, smashed and chopped
1/2 c fresh parsley, chopped
2 tbsp fresh oregano, chopped
1 small red onion, cut into rings
INSTRUCTIONS
- In a large bowl, combine the lamb, salt, pepper, paprika, cumin, coriander, garlic, parsley and oregano.
- Form into 12 small patties and refrigerate, covered, for 30 minutes.
- Heat a grill or grill pan over high heat.
- Brush the reserved tomato marinade over both sides of the lamb patties and grill until browned on each side and cooked through, about 4 minutes per side.
- Remove the patties and let rest.
- Brush the onion rings with the reserved marinade, season with salt and pepper and grill until browned on each side and softened, about 5 minutes per side. Set aside.
- Lightly toast the cut sides of the rolls.
- Spread tzatziki on the bottom half of each roll and top with a lamb patty.
- Garnish with grilled onion and a few Roasted Red Tomatoes.
- Place the top bun on each slider.
- Skewer olives with toothpicks and insert through the sliders to hold everything together.
