Our chunky and chopped Greek Salad is a fun twist on the classic favorite. We swap Divina Roasted Tomatoes for fresh, skip the lettuce and slice the cucumber into long ribbons (feel free to use a spiralizer). This is a great salad that can be customized with chicken, shrimp or tofu and served as a side or main dish year-round.
INGREDIENTS
1 c Divina Organic Sliced Kalamata Olives
1 c Divina Roasted Red Tomatoes
1 cucumber, sliced into long ribbons
1 bell pepper, sliced
4 oz feta cheese crumbles
3/4 tsp dried oregano
1/4 c roasted tomato marinade
Salt and pepper, to taste
INSTRUCTIONS
- Layer the sliced cucumber, bell pepper, kalamata olives, roasted red tomatoes and feta in a large serving bowl.
- Sprinkle with oregano and season with salt and pepper to taste.
- Drizzle the roasted tomato marinade over the salad and toss gently to combine.
- Serve immediately or chill until ready to serve.
