Chopped Greek Salad

Our chunky and chopped Greek Salad is a fun twist on the classic favorite. We swap Divina Roasted Tomatoes for fresh, skip the lettuce and slice the cucumber into long ribbons (feel free to use a spiralizer). This is a great salad that can be customized with chicken, shrimp or tofu and served as a side or main dish year-round.

INGREDIENTS

1 c Divina Organic Sliced Kalamata Olives
1 c Divina Roasted Red Tomatoes
1 cucumber, sliced into long ribbons
1 bell pepper, sliced
4 oz feta cheese crumbles
3/4 tsp dried oregano
1/4 c roasted tomato marinade
Salt and pepper, to taste

INSTRUCTIONS

  1. Layer the sliced cucumber, bell pepper, kalamata olives, roasted red tomatoes and feta in a large serving bowl.
  2. Sprinkle with oregano and season with salt and pepper to taste.
  3. Drizzle the roasted tomato marinade over the salad and toss gently to combine.
  4. Serve immediately or chill until ready to serve.
