INGREDIENTS
- 1 cup Organic Sliced Kalamata Olives
- 1 cup Roasted Red Tomatoes
- 1 cucumber, sliced into long ribbons
- 1 bell pepper, sliced
- 4 ounces Feta cheese crumbles
- 3/4 tsp dried oregano
- 1/4 cup roasted tomato marinade
- to taste salt and pepper
INSTRUCTIONS
Our chunky and chopped Greek Salad is a fun twist on the classic favorite. We swap Divina Roasted Tomatoes for fresh, skip the lettuce and slice the cucumber into long ribbons (feel free to use a spiralizer). This is a great salad that can be customized with chicken, shrimp or tofu and served as a side or main dish year-round.
Simply layer and toss all of the ingredients together using the olive oil marinade from the roasted tomatoes as a your dressing. It's so simple and delicious!
