This open-faced sandwich has it all; sweet, savory, spicy and crunch. This is a great weekend afternoon lunch when you’re short on time but still want something substantial. INGREDIENTS
1 tbsp Renieris Estate Extra Virgin Olive Oil (500ml)
4 tbsp Chili Fig Spread
1/2 cup ricotta
12 slices prosciutto
1 cup baby arugula
1 tsp orange zest
to taste salt and pepper

INSTRUCTIONS
- Drizzle EVOO on bread and lightly bake until warm.
- Remove bread from oven and layer fig spread, ricotta and prosciutto.
- Return to oven and bake until cheese is lightly bubbling and bread is golden.
- Top with arugula, orange zest, salt and pepper to taste and serve.
