Calabrian Egg Sandwich

Toasted brioche, a perfectly cooked egg and Divina Calabrian Peppers make this breakfast sandwich an easy way to add a little spice to your morning.

INGREDIENTS

1 brioche bun, sliced in half horizontally
1 tbsp Divina Chopped Calabrian Peppers
1 large egg
1/4 c grated Parmesan cheese
1/4 c basil leaves
Salt and pepper, to taste

INSTRUCTIONS

  1. Heat a skillet over medium heat.
  2. Dip a pastry brush (or spoon) into the Calabrian Pepper jar to coat it with oil. Brush the cut sides of the brioche bun with the oil.
  3. Place the bread cut-side down in the skillet and cook for 2 to 3 minutes, or until golden brown. Remove and set aside.
  4. Sprinkle the Parmesan cheese directly into the skillet and cook until melted and crisp, about 2 to 3 minutes. Remove from the skillet and set aside.
  5. Crack the egg into the skillet and cook over easy, about 2 to 3 minutes.
  6. Crush the basil leaves gently between your hands to release their flavor.
  7. Place the egg on one half of the bun and season with salt and pepper.
  8. Top with the Calabrian Peppers, basil and Parmesan crisp.
  9. Finish with the remaining bun half and serve immediately.
