Vegan Sticky Date Cake

Ingredients: 

1 jar Divina’s Date Spread
1 cup Gluten free all purpose flour
1 tsp Baking powder
1 tsp Baking soda
1/2 cup Water
1/4 cup Vegan salted butter, softened
1 Vegan egg
1 tsp Vanilla

Ingredients for sticky sauce:
1/2 cup Vegan salted butter
1/2 cup Vegan heavy cream
1 cup Light brown sugar
1/2 tsp Cinnamon

Instructions: 

1. Preheat oven to 350 degrees.

2. In a bowl mix the flour, baking powder and baking soda. In a separate bowl heat your butter until softened. Add egg and vanilla to butter and blend well.

3. Mix the wet mixture into the bowl of dry ingredients. Add water until the batter is easy to stir but still thick. 

4. Butter a small oven safe dish -- 9" x 6" is recommended. Pour the batter into the dish and bake for 15-20 minutes, until cake is set and firm. 

5. While the cake is baking, make the sticky sauce. Add butter, heavy cream, cinnamon and brown sugar to a saucepan or pot and heat to a boil. Simmer on medium heat until the sauce is thick, stirring constantly. 

6. Top the cake with a layer of sticky sauce and a scoop of dairy free vanilla ice cream. Drizzle more sticky sauce and enjoy!
