Vegan Sticky Date Cake

This vegan sticky date cake gets its rich caramel-like flavor from Divina Date Spread. Served warm with a buttery sticky sauce and dairy-free vanilla ice cream, it’s a comforting dessert that feels right at home on any dessert table.

INGREDIENTS

1 jar Divina Date Spread
1 c gluten-free all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 c water
1/4 c vegan salted butter, softened
1 vegan egg
1 tsp vanilla

Sticky Sauce

1/2 c vegan salted butter
1/2 c vegan heavy cream
1 c light brown sugar
1/2 tsp cinnamon

INSTRUCTIONS

  1. Preheat the oven to 350°F.
  2. In a bowl, mix the flour, baking powder, and baking soda. In a separate bowl, soften the butter, then add the vegan egg and vanilla and mix well.
  3. Combine the wet ingredients with the dry ingredients. Stir in the Divina Date Spread, then add the water and mix until the batter is smooth, thick, and easy to stir.
  4. Grease a small oven-safe baking dish. A 9 x 6-inch dish is recommended. Pour the batter into the dish and bake for 15 to 20 minutes, until the cake is set and firm.
  5. While the cake bakes, prepare the sticky sauce. Add the butter, heavy cream, cinnamon, and brown sugar to a saucepan and bring to a boil. Reduce to a simmer and cook until thickened, stirring constantly.
  6. Top the warm cake with a layer of sticky sauce and a scoop of dairy-free vanilla ice cream. Drizzle with additional sticky sauce before serving.
