This vegan sticky date cake gets its rich caramel-like flavor from Divina Date Spread. Served warm with a buttery sticky sauce and dairy-free vanilla ice cream, it’s a comforting dessert that feels right at home on any dessert table.
INGREDIENTS
1 jar Divina Date Spread
1 c gluten-free all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 c water
1/4 c vegan salted butter, softened
1 vegan egg
1 tsp vanilla
Sticky Sauce
1/2 c vegan salted butter
1/2 c vegan heavy cream
1 c light brown sugar
1/2 tsp cinnamon
INSTRUCTIONS
- Preheat the oven to 350°F.
- In a bowl, mix the flour, baking powder, and baking soda. In a separate bowl, soften the butter, then add the vegan egg and vanilla and mix well.
- Combine the wet ingredients with the dry ingredients. Stir in the Divina Date Spread, then add the water and mix until the batter is smooth, thick, and easy to stir.
- Grease a small oven-safe baking dish. A 9 x 6-inch dish is recommended. Pour the batter into the dish and bake for 15 to 20 minutes, until the cake is set and firm.
- While the cake bakes, prepare the sticky sauce. Add the butter, heavy cream, cinnamon, and brown sugar to a saucepan and bring to a boil. Reduce to a simmer and cook until thickened, stirring constantly.
- Top the warm cake with a layer of sticky sauce and a scoop of dairy-free vanilla ice cream. Drizzle with additional sticky sauce before serving.
