Sour Cherry Spread Oatmeal Bars

INGREDIENTS

Dry Ingredients:
4 cups quick oats
1 cup crushed cashews (can be substituted with pumpkin seeds)
1/2 cup hemp seeds
1/2 cup chopped dark chocolate
1/4 cup brown coconut sugar
1 tsp sea salt
1/2 tsp cinnamon

Wet Ingredients:
1/2 cup oat milk
1/4 cup honey
1/4 cup Extra Virgin Olive Oil
1/4 cup tahini
1/2 tsp vanilla extract

INSTRUCTIONS

  1. Preheat oven to 325 degrees Fahrenheit.
  2. In a large bowl mix together all the dry ingredients. Set aside.
  3. In a medium bowl whisk together all of the wet ingredients. Slowly mix the wet ingredients into the dry ingredients until fully combined.
  4. Line a 8x8 inch baking pan with parchment paper. Spoon the oat mixture into the pan and press down firmly until flat.
  5. Generously apply dollops of Sour Cherry Spread on top of the oat mixture. Press the dollops down using the back of a spoon.
  6. Bake for 20-25 minutes.
  7. Remove the oatmeal bake from the oven. Carefully transfer the parchment paper with oatmeal bake to a wire rack to cool completely.
  8. Cut into bars and place into a sealed container to enjoy throughout the week.
