Smoky Kalamata olives, melty Brie, and mozzarella come together in this rich grilled cheese, making every crispy, gooey bite worth savoring.
INGREDIENTS
2 slices sourdough bread, cut thick
2 tbsp butter
2 tbsp mayonnaise
1 tbsp sour cream
1 to 2 tsp freshly ground black pepper
1 c shredded mozzarella cheese
3 slices Brie
3 tbsp Divina Smoked Kalamata Olives, chopped
INSTRUCTIONS
- In a small bowl, stir together the mayonnaise, sour cream, and black pepper to make an aioli. Spread a generous layer on the inside of both slices of bread.
- Add half of the mozzarella to one slice of bread, then layer on the Brie.
- Top the second slice of bread with the chopped Divina Smoked Kalamata Olives and the remaining mozzarella. Press the sandwich together.
- Spread butter on the outside of the sandwich, then lightly spread a layer of the aioli over the butter.
- Heat a skillet over medium-high heat. Add the sandwich, cover, and cook for 3 to 5 minutes, until golden brown and crisp. Flip and cook for another 3 to 4 minutes, until the second side is golden and the cheese is melted.
- Remove from the heat, cut in half, and serve immediately.
