Smoked Kalamata Grilled Cheese

The recipe for this gooey, savory grilled cheese comes from Steph the Sommelier @stephthesommelier 

INGREDIENTS

2 Pieces sourdough bread, cut thick
2 tbsp butter
2 tbsp mayonnaise
1 tbsp sour cream
1-2 tsp fresh ground pepper
1 cup shredded Mozzarella cheese
3 slices of Brie
3 tbsp Divina Smoked Kalamata Olives

INSTRUCTIONS

  1. In a small bowl, make an aioli by mixing together the mayonnaise, sour cream and black pepper. Spread a thick layer onto the inside of both bread slices.
  2. Add half the shredded mozzarella onto one side of the bread, then top with the slices of Brie.
  3. Cover the other slice of bread with the chopped Smoked Kalamata Olives followed by the remainder of the mozzarella cheese. Press both sides of the sandwich together.
  4. Spread a layer of butter, followed by the aioli, on the outside of the sandwich.
  5. Preheat a pan to medium-high heat and add the sandwich. Cook covered for 3-5 minutes until golden and crispy. Flip the sandwich and cook the other side until golden (3-4 minutes).
  6. Remove sandwich from heat, cut in half and serve immediately.
