Smoked Kalamata Grilled Cheese

Smoky Kalamata olives, melty Brie, and mozzarella come together in this rich grilled cheese, making every crispy, gooey bite worth savoring.

INGREDIENTS

2 slices sourdough bread, cut thick
2 tbsp butter
2 tbsp mayonnaise
1 tbsp sour cream
1 to 2 tsp freshly ground black pepper
1 c shredded mozzarella cheese
3 slices Brie
3 tbsp Divina Smoked Kalamata Olives, chopped

INSTRUCTIONS

  1. In a small bowl, stir together the mayonnaise, sour cream, and black pepper to make an aioli. Spread a generous layer on the inside of both slices of bread.
  2. Add half of the mozzarella to one slice of bread, then layer on the Brie.
  3. Top the second slice of bread with the chopped Divina Smoked Kalamata Olives and the remaining mozzarella. Press the sandwich together.
  4. Spread butter on the outside of the sandwich, then lightly spread a layer of the aioli over the butter.
  5. Heat a skillet over medium-high heat. Add the sandwich, cover, and cook for 3 to 5 minutes, until golden brown and crisp. Flip and cook for another 3 to 4 minutes, until the second side is golden and the cheese is melted.
  6. Remove from the heat, cut in half, and serve immediately.
