Roasting olives is a unique and delicious way to serve this classic snack. In fact, the right combination of herbs, spices, fruits and chili peppers will create an intoxicating aroma that will have your guests excited for cocktail hour. We love using bright and briny Frescatrano or Castelvetrano olives or a classic Greek olive mix but experiment with your favorites - there are no bad combos!
INGREDIENTS
1 cup Frescatrano Olives, Pitted
1 cup Organic Greek Olive Mix
1 lemon, thinly sliced
4 sprigs fresh rosemary
4 sprigs fresh thyme
1/4 tsp red pepper flakes
1/2 tsp fennel seeds
1/2 cup Renieris Estate Extra Virgin Olive Oil (500ml)

INSTRUCTIONS
- Preheat the oven to 425°F.
- Toss olives, lemon, thyme, rosemary, fennel seeds and crushed red pepper flakes with extra-virgin olive oil in a medium roasting pan or baking dish.
- Roast the olives in the oven, stirring once or twice, until fragrant, about 20 minutes.
