Marinated Beets & Heirloom Tomato Salad

INGREDIENTS

1 1/2 cups Divina Red Beets in Mediterranean Marinade
3 heirloom tomatoes, sliced
2 to 3 tbsp chopped cilantro, mint or basil
1/2 cup goat cheese crumbles
Extra virgin olive oil, optional for serving
Balsamic vinegar, optional for serving

INSTRUCTIONS

  1. Arrange slices of heirloom tomatoes and Divina Red Beets in Mediterranean Marinade on a large serving platter, slightly overlapping for presentation.
  2. Sprinkle evenly with chopped fresh herbs and goat cheese crumbles.
  3. If desired, drizzle with extra virgin olive oil or balsamic vinegar before serving.
