Briny Kalamata olives, creamy feta and sweet roasted sweet potatoes create the kind of contrast that keeps you coming back for another bite.
INGREDIENTS
4 large sweet potatoes
1/2 lb feta cheese
1 jar Divina Organic Sliced Kalamata Olives, drained
1/2 c chopped Divina Roasted Red Tomatoes
3 tbsp fresh parsley, chopped
2 tbsp olive oil
INSTRUCTIONS
- In a medium bowl, combine the feta, Sliced Kalamata Olives, Roasted Red Tomatoes, parsley and olive oil. Set aside.
- Wash and dry the sweet potatoes. Pierce each potato 3 to 4 times with a fork and place on a microwave-safe plate.
- Microwave for 5 minutes. If the potatoes are not fork-tender, continue cooking in 30-second increments until softened.
- Slice the sweet potatoes lengthwise and fill with the feta, olive and tomato mixture.
- Serve warm.
