Fig & Granola Parfait

This fig and granola parfait layers creamy Greek yogurt, bananas coated in fig spread, and homemade granola for a breakfast or snack with plenty of texture and natural sweetness.

Yield: 4 servings

INGREDIENTS

1 c oats
1/3 c sunflower seeds
1/3 c pumpkin seeds
1/2 c sliced almonds
1/2 c cashew pieces
1 tbsp unsalted butter
1 3/4 c Divina Fig Spread
1/2 tsp vanilla extract
2 tsp cinnamon
4 c Greek yogurt
4 bananas, sliced

INSTRUCTIONS

  1. Preheat the oven to 350°F.
  2. Combine the oats, sunflower seeds, pumpkin seeds, almonds, and cashews in a large bowl. Set aside.
  3. Melt the butter in a saucepan.
  4. Add 3/4 c Fig Spread, vanilla extract, and cinnamon. Heat until the Fig Spread begins to simmer, then remove from the heat.
  5. Add the warm Fig Spread mixture to the oat and nut mixture and stir thoroughly to combine.
  6. Spread the mixture onto a lined baking sheet. If using foil, coat it with nonstick cooking spray.
  7. Bake for 30 to 35 minutes, stirring every 10 minutes, until lightly browned.
  8. Remove from the oven and let cool completely. Once cooled, break into pieces and store in an airtight container.
  9. Slice the bananas and gently coat them with the remaining Fig Spread.
  10. Alternate layers of yogurt, bananas, and granola in individual parfait glasses or a large trifle dish.
