Date Spread Eggnog

Date Spread Eggnog

Ingredients: 

4 egg yolks*
1/3 cup sugar, plus 1 tablespoon
1 pint whole milk
1 cup heavy cream
3 ounces bourbon
4 egg whites
½ - 1 jar Divina Date Spread (depending on desired strength)

 

Instructions: 

  1. In the bowl of a stand mixer, beat the egg yolks until they lighten in color

  2. Gradually add 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream and bourbon and stir to combine. Set aside.

  3. Place the egg whites in a stand mixer and beat on high until soft peaks appear.

  4. With the mixer still running, gradually add the 1 tablespoon of sugar and continue beating until stiff peaks form.

  5. Heat the date spread in a microwave-safe bowl until its just runny (aprox. 20 second). Gently fold the date spread into the egg white.

  6. Fold egg white mixture into liquid ingredients. Serve immediately or chill.

NOTE: If you'd prefer to use store bought eggnog, skip steps 1 and 2.
