Date Spread Eggnog

Divina Date Spread brings rich caramel notes to this festive eggnog. Folded into a fluffy meringue and mixed with cream, bourbon, and warm spices, it adds depth and sweetness to a classic holiday cocktail.

INGREDIENTS

4 egg yolks*
1/3 c sugar, plus 1 tbsp
1 pt whole milk
1 c heavy cream
3 oz bourbon
4 egg whites
1/2 to 1 jar Divina Date Spread (depending on desired strength)

INSTRUCTIONS

  1. In the bowl of a stand mixer, beat the egg yolks until they lighten in color.
  2. Gradually add 1/3 c sugar and continue beating until completely dissolved. Add the milk, cream, and bourbon and stir to combine. Set aside.
  3. Place the egg whites in a stand mixer and beat on high until soft peaks appear.
  4. With the mixer still running, gradually add the remaining 1 tbsp sugar and continue beating until stiff peaks form.
  5. Heat the Date Spread in a microwave-safe bowl until just runny, about 20 seconds. Gently fold the Date Spread into the egg whites.
  6. Fold the egg white mixture into the liquid ingredients. Serve immediately or chill.

Note: If you'd prefer to use store-bought eggnog, skip Steps 1 and 2.
