Divina Date Spread brings rich caramel notes to this festive eggnog. Folded into a fluffy meringue and mixed with cream, bourbon, and warm spices, it adds depth and sweetness to a classic holiday cocktail.
INGREDIENTS
4 egg yolks*
1/3 c sugar, plus 1 tbsp
1 pt whole milk
1 c heavy cream
3 oz bourbon
4 egg whites
1/2 to 1 jar Divina Date Spread (depending on desired strength)
INSTRUCTIONS
- In the bowl of a stand mixer, beat the egg yolks until they lighten in color.
- Gradually add 1/3 c sugar and continue beating until completely dissolved. Add the milk, cream, and bourbon and stir to combine. Set aside.
- Place the egg whites in a stand mixer and beat on high until soft peaks appear.
- With the mixer still running, gradually add the remaining 1 tbsp sugar and continue beating until stiff peaks form.
- Heat the Date Spread in a microwave-safe bowl until just runny, about 20 seconds. Gently fold the Date Spread into the egg whites.
- Fold the egg white mixture into the liquid ingredients. Serve immediately or chill.
Note: If you'd prefer to use store-bought eggnog, skip Steps 1 and 2.
