Roasted Tomato Vinaigrette

We marry our slow-roasted Divina Roasted Tomatoes (with extra-virgin olive oil, garlic, spices) with a splash of vinegar to bring a sweet, rich flavor to this mellow vinaigrette. It’s a way to get a taste of summer even in the middle of winter.

INGREDIENTS

1/4 c finely chopped Divina Roasted Red Tomatoes
1 clove garlic, minced
1 tbsp parsley, chopped
1 tbsp red wine vinegar
5 tbsp olive oil
Salt and pepper, to taste

INSTRUCTIONS

  1. Put the roasted tomatoes, garlic, parsley, a pinch of salt and some pepper into a small bowl and stir together.
  2. Stir in the vinegar.
  3. Add the olive oil, stirring it in.
  4. Adjust the seasonings to taste.
