INGREDIENTS
- 1/4 cup finely chopped Roasted Red Tomatoes
- 1 clove garlic, minced
- 1 tbsp parsley, chopped
- 1 tbsp red wine vinegar
- 5 tbsp Renieris Estate Extra Virgin Olive Oil (500ml)
- to taste salt and pepper
INSTRUCTIONS
We marry our slow-roasted Divina Roasted Tomatoes (with extra-virgin olive oil, garlic, spices) with a splash of vinegar to bring a sweet, rich flavor to this mellow vinaigrette. It’s a way to get a taste of summer even in the middle of winter.
Put the roasted tomatoes, garlic, parsley, a pinch of salt, and some pepper into a small bowl and stir together. Stir in the vinegar. Add the olive oil, stirring it in. Adjust the seasonings.
