Perfect for a cozy night in or quick weeknight dinner, these Calabrian Chili Garlic Noodles are spicy, savory and come together fast!
INGREDIENTS
For the noodles:
8 oz wide rice noodles
1 tbsp Divina Renieris Estate Extra Virgin Olive Oil
2 shallots, sliced
2 cloves garlic, minced
⅓ c chopped scallions (white part only — save greens for garnish)
1 tbsp grated ginger
4–5 tbsp low sodium soy sauce or tamari
1 tbsp brown sugar (or coconut sugar)
1 tbsp sriracha (optional)
2 tsp rice vinegar
1 tbsp toasted sesame oil
2 tbsp Divina Calabrian Chili Garlic Spread
2 Divina Roasted Red Peppers, diced
INSTRUCTIONS
- Cook noodles according to package directions. Drain and set aside.
- In a large skillet or wok, heat oil over medium heat. Add shallots and garlic and sauté until lightly browned, about 5 minutes.
- Add scallion whites and ginger. Cook for another 2–3 minutes.
- Stir in soy sauce, Divina Calabrian Chili Garlic Spread, brown sugar, sriracha (if using), rice vinegar and sesame oil. Mix well to combine.
- Add the roasted red peppers and cooked noodles. Toss until noodles are fully coated and everything is heated through.
- Garnish with scallion greens and serve hot.
Optional: Add bok choy, tofu, chicken, or any stir-fried veggies to make it your own.
