Caper & Cornichon Mayo

makes about 1 cup
- 1 cup mayonnaise
- 8 cornichons, chopped
- 1 tbsp capers + 1tsp of pickling brine
- 2 tsbp lemon juice
- 4 sprigs parsley, finely chopped
- 4 sprigs dill, finely chopped
- 4 sprigs tarragon, finely chopped
This cornichon mayo is our version of tartar sauce and the perfect complement for any deep-fried food; fish, potatoes, pickles, and on and on. Cornichons and Divina Organic Capers are its distinguishing flavors. Cornichons are pickled French gherkin cucumbers, small in size but big in crunch and tart flavor. Organic Capers (the edible flower buds of the Capparis shrub) are found in countries surrounding the Mediterranean. They are hand-picked, then preserved in salt or in brine.
Mix all ingredients in a bowl. Season with salt and pepper. Our cornichon mayonnaise keeps in the refrigerator, covered, for up to 1 week.
