Sometimes we forget how satisfying a grilled cheese sandwich can be for dinner. Treat yourself to a couple of these savory-sweet cheese toasts, served with a leafy salad and a glass of wine, if you like. It’s a meal that could easily become a habit.
- 1–2 tablespoons butter, at room temperature
- 2 slices artisanal bread
- 2 tablespoons sour cherry spread
- ¾ cup grated Gruyère cheese
- Freshly ground black pepper, optional
Spread the butter on one side of each slice of bread and slather the other side with the cherry spread. Cover the cherry spread with the cheese on one slice of bread. Close the sandwich with the other slice of bread, butter-side up. Set the sandwich aside.
Heat a medium skillet over medium-low heat. Add the sandwich and cook until the cheese melts and the crust is golden brown, 2–3 minutes on each side. Transfer the sandwich to a cutting board and season with pepper, if you like. Cut in half and serve.
