This is our version of tartar sauce and the perfect complement for any deep-fried
food—fish, shoe-string potatoes, pickles, and on and on. Cornichons and capers are its distinguishing flavors. Cornichons are pickled French gherkin cucumbers, small in size but big in crunch and tart flavor. Capers (the edible flower buds of the Capparis shrub) are found in countries surrounding the Mediterranean. They are hand-picked, then preserved in salt or in brine.
1 cup mayonnaise
8 chopped cornichons
1 tablespoon capers plus 1 teaspoon of the pickling brine
2 tablespoons fresh lemon juice
4 finely chopped sprigs each fresh parsley, dill, and tarragon
Mix all ingredients in a bowl. Season with salt and freshly ground black pepper. The mayonnaise keeps in the refrigerator, covered, for up to 1 week.
